SPECULOOS (BELGIUM), spicy Belgian biscuits typical of Christmas period.
Ingredients (50 biscuits):
500 grams of flour
150 grams of butter
1 egg
300 grams of sugar beet unrefined (cassonade) (alternatively you can use sugar cane)
1 teaspoon coffee mixed with spices, usually cinnamon and cloves
Preparation: In a bowl mix sugar beet, butter, egg and spices, then add gradually the flour and amalgamate all good. When the dough is ready divide into two parts. At this point if you leave the dough to rest for 24 hours the result will be better.
Roll the dough until it reaches a thickness of 5 mm, and then cut the dough in rectangular size of 3x7 cm. Repeat the same for the other part of the dough.
Warm the oven to 180°C, and then placed cookies on paper and baked for 10-12 minutes (they must still remain soft in the middle). Store cookies in a metal box. |
