BANITZA (BULGARIA), is the Bulgarian pastry, a hot pie stuffed with sheep's milk cheese or buttermilk curd and spinach or chopped meat, but also nuts and jam.

Ingredients (serves 6 people):

450 grams of frozen puff pastry

Oil

Stuffing:

75 grams of butter

250 grams of fresh sheep's milk cheese

3 egg yolks

3 tablespoons cooking

1 pinch salt

1 pinch of sugar

1 tablespoon minced dill

3 egg

1 egg yolk
 

Preparation: Thaw the pastry roll in a thin layer and divide it into two parts. Grease with oil in a round pan put over a sheet of pastry. In a container chop the butter and mounted it with sugar and salt. Add the egg yolks, cream, sheep's milk cheese and dill. Whip the albumen and add them to the dough that will fill the puff pastry. Cover with the other pastry and with the remain pastry made some strips that put over the pastry as decoration composing a kind of tart. Brush with the yolk of the egg the surface and cook for 45 minutes in hot oven 200 degrees.
