Bulgarian Cuisine: The Bulgarian cuisine, is a simple and rustic peasant cuisine, based on ingredients such as vegetables, meat (especially pork), yogurt and cheese. Crossroads of the Slavic, Greek and Eastern Europe cuisine, the Bulgarian cuisine like all Balkanic, is influenced by the Turkish. The Bulgarian recipes are simple and often use fresh products, the flavor is often pungent and abundant are the strong condiments such as hot pepper, black pepper and red paprika. Lunch begins with the salad (or with a soup), followed by the main couse, often based on pork, then it end with a dessert. Among the dishes and ingredients are typical: Tarator (cold soup), Shopska salt, Moussaka, the Gyuvetch, Sarmi, Pita (bread), Banitsa (a puff pastry), Kozunak, Shkembe chorba, the Popara, Bob chorba (bean soup), Lyutika, Lyutenitsa, sausages (Soujouk, Lukanka, Babek, Sushenitsa), Sirene (white cheese), Kashkaval (yellow cheese), Garash (chocolate cake).
