Greek Cuisine: The Greek cuisine boasts an old culinary tradition. The Greek cuisine is based on goats and sheepskin meat, many kinds of seafood are also widespread. The meal begins with a series of appetizers such mezédes, dolmades, taramosalata, melitzanosalata, tzatziki and puff pastry, the appetizers are accompanied by drinks like the local vermouth, ouzo or mastìcha. The appetizer is followed by a main dish that can be made of meat or fish, usually grilled or plated. Often beef, lamb or pork meat, are made spit-roasted, between the typical meat dishes are: souvlaki (beef or pork grilled), soutzoukakia (beef meatballs with tomato sauce), dolmades (grapevine leaves stuffed either with rice or vegetables), the ghiouvetsi (lamb roasted in the oven), keftedes (fried meatballs with meat or vegetables), moussaka (eggplant casserole (aubergine)-based dish), the kokoretsi (seasoned lamb or goat offal). As for the fish it's cooked in many ways: fried, grilled, and baked. Sometimes the main dish can be made up of a salad and cheese, among them the famous Greek salad choriatiki based on raw tomatoes and seasoned with olive oil, olives, peppers, fresh sliced onions, chopped feta cheese (the national cheese). At the end of the meal arrives the dessert among the most typical: baklavas (dough with chopped almonds and honey), galaktomboùreko (custard in phyllo), the kataifi (pastry filled with chopped almonds), cream or jam tarts cakes. A famous Greek product is the yaourti (yogurt), another famous product is olive oil, which is present in almost every dish, usually of high quality, it's used without savings.
