Irish Cuisine: The traditional Irish cuisine has dishes and ingredients simple and genuine, including fresh vegetables, potatoes, fish (mainly salmon and trout), oysters, mussels, soda bread and cheese. Among the simple dishes of the Irish cuisine are: Colcannon (puree of potatoes, cabbage, garlic, milk, leek, ham and bacon based), Champ (puree of potatoes, green onions, milk and butter based) the Irish stew (lamb or sheepskin stew with potatoes, onions and parsley), Boxty (crepe potatoes), Bacon and Cabbage (stew of bacon and cabbage). Typical of Dublin is the Dublin Coddle (pork sausages and bacon with boiled potatoes and onions). Rightly famous for its fish and seafood, between the most common fish used in the Irish cuisine are salmon, trout and cod, but also oysters and shellfish dishes are popular; Ireland also produces excellent lamb, beef and pork. Among the most popular cheeses are the Cheddar, Cashel Blue, the St. Killian and the soked cheese Durrus. Surely not to be missed specialties such as black pudding, the farmhouse cheese, soda bread (bread leavened with baking soda) and, of course, beer Guinness, the Irish Coffee and whiskey. Breakfast and dinner are the two most important culinary moments of the day, is the famous Irish Breakfast an abundant meal made of bacon, eggs, sausage, black pudding, white pudding (pork, fat and oatmeal), fried tomatoes, tea or coffee. Important also is the classic afternoon tea break, typical of Anglo-Saxon countries. Lunch is light, usually is consumed only a sandwich.
