Preparation: Take the piece of meat, make incisions helping with a knife, putting in a piece of garlic with rosemary, a piece of bacon, tie with kitchen twine. Transfer the meat in a glass container. Meanwhile, prepare the marinade with ½ dl olive oil, the juice of a lemon and a teaspoon of thyme leaves that pour on the meat making rest for 1 hour. After you put the meat in a frying pan and brown on all sides without adding oil for 5 minutes. Put it in a pan in the oven for 10 minutes at 180°C, then add ½ glass of white wine; continue cooking for 45 minutes, sprinkling with the marinade that was prepared earlier and its juice. | |||||
