FILLET OF ROAST PORK WITH BACON (Arrosto di Filetto di Maiale con Pancetta), is a main course meat very easy and quick to prepare. Cut meat is lean and tender. 

Ingredients (serves 2 people):

600 grams of pork fillet

½ clove garlic

60 grams of sliced bacon

White wine enough

Salt

Pepper

1 sprig of rosemary

Some leaf sage

Olive oil 

 
 

Preparation: In a pan, place the oil and let brown garlic, rosemary, chopped sage, salt and pepper. Add the meat and let flavor for 5 minutes. Then remove from the pan and cover with slices of bacon, tie with kitchen twine. Put the meat in a pan and sprinkling with white wine, and bake at a temperature of 180°C for 30 minutes.
