Preparation: Dissolve yeast in a cup of warm salt water, then pour it in the center of flour put in form of a fountain on a rolling-board. Mix slowly adding little by little the oil, you have to get as final result a soft and elastic dough. Put the dough to rise in a container covered with a towel for at least 4 hours. Prepare the filling by cutting the ham, the mozzarella cheese and black olives, add salt and pepper lightly. After rising of the dough work still for a few minutes and then stretch it up to form a thin sheet. Cut the dough into four circles of about 18 cm in diameter and cover half of each circle with the stuffing prepared earlier. Close the calzone fold up the circle of dough and closing it with a pressure of the fingers. Baked the Calzoni in the oven at 200°C for about 20 minutes. Once cooked serve them hot adding above a trickle of extra virgin olive oil.
