Preparation: Clean artichokes, removing leaves toughest cutting the stems and put that aside. Put it to boil in salted water with a bit of lemon juice. Dry and open the center of the artichokes and stuff with the following mixture: boiled potatoes in salted water, then mince along with boiled stems of artichokes and a teaspoon of capers. Then add the paste of anchovies, 1 tablespoon of grated cheese, egg yolks, salt, pepper and chopped parsley enough. In a casserole buttered and with a bit of oil lying artichokes and bake in oven for 15 minutes at 200°C.
